We all relish eating chikki, patti, ladoo prepared with sesame seeds, especially during winters. Crispy sesame chikki is crusty and tasty same as sesame seeds gajak. It takes very less time to prepare this chikki.
Ingredients for Til Chikki Recipe
Sesame seeds - 1 cup (150 grams)
Sugar - 1 cup (230 grams)
Ghee - 2 to 3 tbsp
Cashews - 20 to 25
Pistachios - 1 tbsp (25 to 30)
Green cardamom - 7 to 8
How to make Til Chikki Recipe
Start with all the preparations first for making this chikki. It is very essential to cut off the chikki the moment its taken off from flame else it can set in the wok itself.
Chop the cashews in small chunks and pistachios in long thins slices. Peel the cardamom and take out the seeds.
Grease a board or plate with some ghee to set the chikki. Preheat a wok with heavy bottom and place sesame seeds into it. Keep the flame medium-low and roast the sesame seeds by stirring constantly until they get puffy and appear slightly dark in color. Take out the roasted sesame seeds in a plate.
Take some ghee in a wok and allow it to melt. Now add sugar and stir constantly keeping the flame medium-low until it melts. After the sugar melts completely, turn off the flame and add roasted sesame seeds in the melted sugar, followed by chopped cashews, pistachios and cardamom seeds. Mix all the ingredients really well. Make sure that the flame is always kept medium-low. If the flame is too high then the sugar can burn instead of melting.
Place the mixture over the greased board and grease the rolling pin with some ghee and thinly roll it out. Immediately make cuts over it with a pizza cutter or a knife. When cools down, separate out the chunks and place them on a plate.
Mouth drooling and crispy til chikki is ready. Leave it as it is in open for an hour and after this store it in any air tight container and relish eating for up to 2 to 3 months.
Suggestion:
While roasting the sesame seeds, make sure that you don't over cook them else they taste bitter.
Also, keep constant check on the sugar syrup. When the sugar melts completely, turn off the flame else it can also get bitter in taste.
You can add dry fruits in sesame seeds as per your preference and taste or you can even increase or decrease the quantity.
